I didn't use Gravity 2200 but from the f-one site it doesn't look (or is described) as foil that could cause such problems.
They say it have an excellent glide and is a pump machine. It seems to me that with more time you will become the low wind expert with this foil ;)
I think it would be harder for you to to foil in low wind using a smaller foil.
I would guess that you should use more front foot pressure to make a board more horizontal. Probably the nose of the board is pointing a bit upwards and with less pull from the wing that causes stall.
You can try:
- level the board as described above
- pump both the wing and the board in lulls
- ask someone with more experience to test your eqipment or just watch you riding and give you some hints
