Have you tried smoking it at the start with some hickory wood chips soaked in red wine for 30 mins? It's a great trick!


Ted,pfffffft bloody hickory,your a kiwi mate. My new favorite wood chips are manuka chips,from enzed bro. leaves a beautifle smoked flavour with a slight sweetness to it. yum yum and more yum

Yeah fair point. But thats what we always had back home and now I have moved onto the hard woods! I love to mix it up though. Where are you sourcing yrs from?

ps: hope we don't get in trouble for hi-jacking a thread here!!

hi jack,boofy summed it up best. this is the beer garden of forums. on the chips mate,i get them through a local bbq shop. the best thing is there are so many good things you can use to smoke your food

Yep - slightly pink , took at least an hour less cook-time Teddie too which is gotta be a good thing .... got a couple of planks western red cedar & some salmon to try out next might do it tonight (just plonk the slamon on top of the offcuts and it burns the cedar around the fisho!!!!!!!!!!!!!

I like lamb, maybe more than steak.

I've got very pedestrian tastes, one of my fav meals is a simple grilled lamb chops and 3 veg with a bit of gravy. Especially if the gravy is made with the drippings from the base of the griller.

Don't even mind if it's been through a thermo nuclear reaction and the fat is all crispy, I always eat the lamb fat when it's burnt.

My missus hates to cook and she's a picky eater and it's not the sort of meal you would do just for yourself so we'd probably lucky only have it 6 time a year at the most.

I don't know what it would do for my cholesterol levels but then I've never had a reading above 2.7 in my life. I think I'm just one of those people who's got naturally low levels.

g'day mate - yeah I'm the same wiith cholesto too - eat like a horse & freight train metabolism helps too ..... had a 4 day bake-out on the oven due to the bloody rain over here but got it done yesterday arvo ----- am sussing out the temp range in her right now and will be pizza-ing maybe tomorrow just got to make some dough up and experiment I guess (will send pics too) --- all up she cost $1150 shekels (The trolley came from scrap HD pergola tubing all I paid out for there was for caster type wheels from Bunno's) .... cooking inside sucks eh! .... have a good one mate - Pup
