I think you'll find wave riding skimboards like the one in that vid are made of foam like a surfboard and do carry some volume, they aren't using the little plywood ones when there riding waves ( volume still not a myth )

Sure some of them have a PVC core in them, but it doesn't mean you need it. I ride my old Nemo plywood skimboard in the waves when it gets too light for me to ride my surfboard. As has been raised, if you can plane, you don't need volume. My standard surfboard is 21.5L, and dropping volume was the single greatest step I made in improving my riding.
You're not duck diving, and you're not paddling. So why carry around all that extra volume and length? See rants below from others.

Volume is not nearly as important in kiting as many other aspects such as surface area and in some styles of riding it doesn't play any part of all, when talking about drifting the kite and riding just the wave unpowered by the kite then volume does have a role to play
