I'm sailing. Is there any PDF guide how to wing foil? This would be really cool.

Stop reading and get out there. That's how you you learn for real and all questions will be answered in real time. It's not theoretical quantum physics.

And the answers don't make sense until you've done the journey, or are ready for the lesson, or some other type of jedi-mind trick thing :-)
