looking for my first wing setup and was debating between mantis v2 and strike v2. Going to ride in 20-25 mph winds and hope to mostly ride swell strapless.

Both are great wings especially for that type of wind. I prefer the Mantis V2 due to the handles. I also find the Mantis is easier for my students. I use both wings for teaching. In bigger sizes, the F1 is better low end and lighter in the air, the mantis 4.5 and smaller.
