Which f-one foil is fastest / best for slalom wing racing? Eagle 690? Escape?

I actually have the same question. Not much out there on the Escape 630 - mostly Youtube videos showing it being used by kite foilers and not wingers.

There's more discussion on the Eagle 690 - generally favorable feedback for powered riding conditions.

The Escape will be best because they are designed for stability at high speed.
I have the 630 and people certainly use them for wing. Hugo Marin used to ride them down monster waves simply because they are more stable down all the wave energy and don't create as much lift as the Eagle or Sk8.
A very underrated foil even though it looks like an "old" design, it performs amazingly. They just released a new smaller Escape.
