You won't regret not going for the 1125, it's a tricky one and will cause frustration especially in lighter winds.
I rode a bunch of the SAB front wings for quite a bit (679, 699, 790, 799, 940, 945, 950, 1000, 1100, 1110)The only 2 setups that felt less draggy to me (but still draggy) were the 1000 and 1110, but they didn't turn even with a small stab like the 370.
Depending on your weight (if you're below the 85 kg mark I'd say), the 850/1150 could be a good combo to cover light to strong wings, no swell to big swell.
I just received my 178 so haven't winged it yet, just tried it dockstarting today 4-5x times and it felt pretty fast.
But since you're getting into HAs, you might be best served by the S208 or the S210 to get a bit more lift and stability.
Once that feels rock solid, then ask yourself if you want/need even looser/faster.
I can't give you a comparison on the 208 vs 210 as I only got 2-3 sessions winging on the 208, but it definitely felt faster and looser than the 210. I spent a lot of time on the 210 and it was a solid performer.
I agree with 85 cm mast unless you plan on proning it at lot or winging in shallow spots.
Fuse I'd go with 600 if you want looser, more reactive, or 700 if you want less pitch sensitivity.
