Its best to get something that will easily get on the plane after they learn the basics.A big adult learner board wont allow them to progress quickly.Once they show any interest I also suggest getting a high performance rig like the redback ,my 9yr old now feels like the coolest kid on the water and can sail in 30knots on a 2.6 . Adapting from a dedicated kids learner board to short board didnt take long as he learnt to sail powered in straps and harness as well as water start on that board. Good luck there may be tears sometimes but lollies help.
