I have a severne 5.6 S1. I can get the sail to set well for lighter breezes using the top clew, as per the sails printed specs, 430 luff and 180 outhaul. When I use the botom clew for the outhaul I find it looks offensive. When using the botom clew I am guessing you are on maximum downhaul, do you use more outhaul than stated on the sail to set the botom clew.

when setting any sail with more downhaul you should probably flatten it off with a touch more outhaul. Sometimes just moving the boom out one more notch.

The flatter shape will make the sail more twitchy but less powerful and more controllable in stronger winds. More downhaul should make the wind release from the head easier and theoretically less twitchy but in stronger wind its usually gustier and therefore will move the centre of effort around more making it feel less stable.

I have tried the lower clew hole on my 5.6 (avatar sail), 5.0 and 4.5 S1's (2009) and find the best result is to change down - I avoid it as much as possible as it just feels wrong twitchy and too on off - usually only ever if o/powered on 4.5 now

I never use the lower setting, as I understand on the S-1 it is designed for shorter riders.

For overpowered conditions I downhaul so that the end of the batten above the boom is just past half way across the mast (no downhaul applied), and apply a little extra outhaul, (I never measure the outhaul I just feel the tension by pushing the sail where harness lines sit).

If that amount of outhaul is not enough, rig smaller.
