Something like a JP Super Sport, Fanatic Blast, etc, coupled with a twin cam or no cam sail, like a NP Speedster or V8, etc, finished off with a fin like the MFC Liquid Pro can make for a very nice, comfortable, and fast setup.
Going off the wind you'll only be slightly slower than the slalom guys, Joe Average on the beach won't see any difference at all.

I used to have a Starboard Carve, KA Koyote, and MFC setup like this and it was excellent.
Bonus: the no cam sails can generate a lot of power, and get you going very early. I (80kg) used to be able to plane if a kite-board could. That was my wind indicator; the kites were going.
By the way I'm sailing mostly in the bay and I've moved to a FreestyleWave setup, with very soft and cushy SuperFreak sails. I prefer riding the chop/small swell in the bay and except next to the runway I think it might get a little too hairy to be genuinely enjoying myself on slalom gear. A FreestyleWave setup is lots of fun in choppy conditions, and still rather fast (there's a nice flat spot about where the straps are). I'm even considering seeing how fast I can get it to go with a new sail and fin combination. And nothing beats gybing a FreestyleWave setup; swooooosh; come out faster than you went in.
I am going to be using it with a 6.8 sail that i have always used and it works for me an all conditions from 8 knots all the way to the windiest i have used it in about 36-40 knots, Im only fifty kilos and gaining so im not to sure at the moment i will ask around a little bit more
