Sail Trim & Tweaking

When choosing what sail to use is it better to choose bigger & tweak for over powered or rig small & tweak for under powered?
Non cam rigs of the same style.

I have a 5.7 & 6.7 NP Hellcats, so given the conditions are steady (6.2 strength) is it better to go smaller or larger.
In this scenario i left the 6.2 at home.

x3 ..BIG .. with downhaul...a good 2 hour session going like hell is better than a plod along .

ALSO depends if its your first sail of the day or second
