If the radius wasn't limited the entry and exit arms could be very broad off the wind to score a higher average speed, but it wouldn't be a true indication of how good the gybe was.
With the 50m radius the entry and exit have to be roughly parallel so it is a better indicator of the efficiency of the gybe.
If you turn on a wider radius it doesn't count.
