I picked up a second hand JP "X-cite Ride" board 146L and it came with a 48cm fin and 2 sails: 6.2 and 5.25

According to this chart: http://jp-australia.com/2013/products/boards/x-cite-ride/ - that fin is too large for the sails. I'm thinking I'm going to need something closer to 37cm.

Can anyone provide advice on what fin I'd need to go for? Thanks

That is based on fin size for planing

What level are you at? Planing fast with outboard straps will be very different to using the setup you have as a beginner. An expert would not use smaller than about 7.5 on that board, most like 8-9m

I would describe myself as beginner/intermediate. I can plane and water start, but not really gybe yet.

30 - 35cm
Dont over complicate it.
Fin = (5 x sail m2) +\- 2cm
+ if you're a heavy sailor
- if you're lighter

I have the same board and have gone through the progressions you describe. I have used sail sizes from 5.7 to 7.2 m with different fin setups. Initially I was very inexperienced and just used the 48 cm fin, both in sub planing and overpowered situations. The big fin was good for light wind days but it caused a lot of tail dancing when the wind got up a bit. I thought this was normal! Eventually I found out that a smaller fin should be used for the sails I use, so I dropped down to a 38cm fin. This was much safer and still got the desired result in wind conditions between15-20knts. If it is windier than this then you will probably be thinking of using a smaller board. I jumped down from 146 to 107 but would recommend a 120 if you want a more gentle learning curve. Occasionally I still use the 146 when the winds are really light and I am using a smaller sail. On those days the fin gives more lift to get on the plane and the smaller sail ensures that you are not too overpowered.

sail range 6.5 to 9.5 - with 76 cm width - as Mark says - best with 48 cm fin and about 8 meter sail
for a heavyweight like me that would be perfect in about 16 knots even with some chop
for a 7 meter sail around 40 cm is pretty good
fins are not only about length
it is only a first indicator

+1 for 38cm fin with the 6m sail on that board.
