Are there any recognised and/or good spots for flat water sailing in the South Pacific?
A Google search hasn't produced any results so perhaps not?

New Caledonia is flat water windsurf and kite surfing heaven. Both are very popular there too, so several rental opportunities if you can't be bothered bringing gear over. I brought gear over last September and sailed with 6.3 to 7.0 most days in SE trade winds.

Plus 1 for New Caledonia. The sharks have been misbehaving over there of late, so work on your dry gybes. Also Lord Howe lagoon, I've sailed over there a couple of times. Always windier than I wanted on a yacht, so nice windsurfing. Definately no hire gear there though.

Thank you
I hadn't considered New Caledonia.

I'm looking into it right now.
Thanks for the tip!

When is best time of year to visit New Cal in terms of wind reliability and also avoiding peak tourist time?

I can only find one outlet, Aloha Windsurfing. Are you aware of any others? Cheers.

The warmer months have the best trade winds, so Oct-Apr. Locals sail all year round.

Do you know of any hire outlets there?
I have found "Aloha Windsurfing" but it's proving difficult to find out what gear they have.
