Well I taught a youngish guy a few years back, I gave him the option slow and easy (uphauling) or short and hard, (waterstarting). He was fit and full of enthusiasm so opted for short and hard.
He was water starting about his 3rd lesson, blew me away, it was the first time anybody's taken up this choice with me, didn't think it was possible for anybody to pick it up so quick.
So it really was the short method and didn't turn out to be particularly hard.
My recommendation now, to anybody is to try to water start very early. Much easier if you have somebody who knows what they're doing to guide you, wind strength and sail size are critical for your success. Too much power you'll end up getting thrown all over the place, too little and you won't do anything.
I started him off under powered, learning to fly the rig, and control board orientation while swimming alongside it. Then it was one foot on the board, and keep it at 90deg to the wind, without worrying about getting up, just go out 20m or so, turn it round and come back. Once that was under control we upped the power, a tad, and I got him to pull the board towards him with his foot and push the sail up as high as he could, wasn't long before he was on the board and sailing.
So to answer your question, can be almost straight away.
