My thoughts are that the Quads have got better range than the evo so your choice isn't so critical, both would be fine but obviously a test sail would be the best solution. Having spent a bit of time riding a 70 l Evo I think that a Twin fin is closer in style particularly if you like less grip but there is nothing to stop you setting up a quad with smaller fins and getting the same effect I guess.
I would go the larger size. Not owning a quad (yet) I can't comment on performance but from what I've seen people using and reading up on quads/quad's V thrusters etc. recommended is at least your weight equivalent in litres. . If you sail in Maui then use a 75lt quad but for real world conditions I reckon add 10-15% to your kg weight. Some 100lt+ quads for the bigger guys seem to perform well. . there are not many used quads around so obviously they are popular.
I've just changed from twins to quads and can confirm the much repeated sales pitch that the bigger ones really do feel like smaller, looser boards. my recommendation would be to make life easy and pick a bigger one. Having said that both your choices are above your body weight, so I don't think you are going to go far wrong either way.
Try them out before you buy. If your in Vic, I know the zu has a heap of boards on demo at the moment, I also have an 82L quad you could try just send me a message. I think going too big is unnecessary and would never use bigger than 82 for in the waves, but that's just me.
