BS. I know its a meme and all, but learning in smooth conditions helps a lot when it becomes choppy. Muscle memory counts for a lot when sailing.

Agree completely with sentiment, but learning to gybe in flat water let's you work out all the bugs in your technique that would normally take years to iron out in choppy water. Learn to do a planing gybe in the flat water, then move into the chop and learn to do them there.
