Recognizing the relative merits of the "new school" boom shape outlines, can someone explain why this shape is generally not available in larger sizes over 200CM for instance.

Essentially because they are too narrow to accommodate the draft of a ~7m sail which is probably where that size starts these days. If you scale them up to make them wide enough the front end becomes massively wide hindering sheeting and rig control etc.
