I saw a mention of fitting hydrofoils down the edges of the board. Could you fit two at the front and one or two at the back, out to the sides, as below? Notice the 45 degree angle back towards the centreline, that makes it self stabilising for roll, as the rolling to one side makes that side go more horizontal (more lift) and the other side more vertical (less lift)
