I hate windsurfing in cold weather* (yet, I do it every year). However, one great thing about those colder temperatures is the increased air density which lets you use almost a sail size smaller. It's a neat feeling getting that extra punch in the sail and how, at least where I live, it tends to make (or feel) the wind steadier.

Open palm mittens work pretty good for me and I wear a type of sup windbreaker. I am toasty warm on the water, the worst part is changing.
I use booties year round, but it must be a challenge for those that normally ride barefoot
