The PFI730 has a higher top speed I've been told and I think it it likely the best all round wing, Greg Glazier uses it exclusively. I've only used the PTM926 a couple of times and it excels in light and holey wind, if you can make a foiling jibe it will stay on the foil even in almost no wind. In light wind I try to jibe in the gusts with the PFI730 to stay on foil.
Anything above 15 knots the PFI 730 is great, I've used it up to 30+knots and it is stable and controllable with the right size sail. I guess it depends if you are primarily chasing light marginal winds like Jericho is sometimes or if you expect to use it in higher winds as well.

11-14knots 7.0 Flyer and PTM926
14-18knots 5.9 Goya Nexus w either wing
18-22knots 5.1 Goya Cypher+ PFI 730
22-25 4.4 Goya Cypher +PFI730
25+ 3.8 Sailworks Revo +PFI730

Keep in mind once you are foiling you don't need much to keep going especially with the PTM 926.
IMO the Wizard/Phantasm/Cypher combo is magic.
