At 95 kg, my biggest sail is a 7.0. For freeride foiling I don't need bigger (unless I want to race). My smallest is a 5.0.
So 5.0 and 7.0 are the range that covers 97.42873% of conditions I foil in. Don't need much else.
Yes quite the same at my end currently. BUT the Finge is a completely other sail. The early power it provides is so crazy. I assume your 7,0 is not a fringe... ;-)
The Fringe is amazing. I have a 5.0 (2020 model.. which I think is not that different from the earlier model except materials changed a bit).
The sail is so direct, alive, it really 'talks' to you. You immediately feel what it wants. The sail has a very clear sweetspot, and it just talks to you, tells you where that sweetspot is. If you're out of the sweetspot it is still forgiving (it just powers down), a few adjustments and you're back in it.
It also allows me to go upwind like crazy!! Everytime I am out foiling on the 5.0 there are fin windsurfers with their 8+ meter sails barely going. And I am just charging around. So much fun! Paired with the Goya skinny boom, and 85 goya mast, the rig is so light. Such a pleasure to control and learn jibes.
It took me months to gather the belief that I may need to invest in the Fringe + rig, but I tell ya.. its a constant return on investment!
The Fringe is for me really a complete new World in Windfoiling. It opens the door to heaven.
Everything you wrote I can agree by 100%. For me new was also that with sheeting in it get's a little turbo !!
I'm only still not completely sure what is the biggest size I need.
What is your driver weight and foil setup?
This would be really interessting !
If possible it would be great to get your estimation about the windrange. I only tested the low end power with 4,5 in 8-12/13 nods.
Thanks a very lot for your experiences.
It sounds that a 5,3 would be an option.

The fringe is a very popular sail for foiling in the gorge ,being a three batten they have lots of low end and the newer ones hold their shape better in over powered conditions. For foiling people I know like them because they are light and come in very small size 2.8 ,Simmer also has a three batten Tricera starts with 3.4 to 5.0 and S2 Maui also offer three batten.Myself I use 4 batten almost as light as a three and hold shape a bit better for me at least.
.
I have really no clou about the pro's and con's of the tricera compared to the Fringe. Simmer seems to have more CC Mast bend curve as Goya and Gun. So I guess the masts I have will then not be compatible for all sails.

My biggest wavesail for foiling is a 4.9 S2Maui Dragon. Leaves me not having to touch the water ever again in 10-13 knots with 900cm2 foil, 105L board and 91Kg. Below that I move to my race foil with racing sail. Below 10 knots a non-cammed sail loses much of its performance anyway because of the big lulls (here at least) in which the profile collapses.
I have a 5.7, but never use it, it doesnt add much lowend compared to the 4.9, mostly because the conditions get gustier in the low end and the gusts are enough to get me flying with either sail and in too minimal conditions the lulls are too big to allow me to keep flying with either sail.
Very great ...Sounds incredbile!! Where do you go out? On Wave Spots or on Flat water? I guess with waves the sail can be a bit smaller as on flat water.
The difference between 5,7 and 4,9 is really so small???
When do you get flying? How many knots do you need ...estimated?
Has S2 Maui the same Mast Bend Curve with round 13,5-15 ? Tendence to a bit Flex Top?
