Foil gybing big sails

Does anyone have any tips on foil gybing big sails in light winds? Particularly dealing with the apparent wind when flipping the rig?

I obviously haven't got the technique/timing right with mine but can't quite work out how to adjust it to avoid getting completely backwinded and dropping off the foil mid gybe.

It's more like the sail flip in a heli tack (where you also have apparent wind from the front). Slice the sail forward, keeping it neutral, then let the wind flip it around quickly (push a bit with the back hand, pull with the front). This is much easier with a flat/on-cambered sail than with a sail that keeps a deep profile.
