To me the Flow1000 is very manageable even in really windy conditions as it foils very happily with board speed between 16-22kts, regardless of wind speed. If you are happy free-riding then in my opinion you only need to change front wing sizes once you want to go faster.

I use the Flow 1000 (90cm mast and fuse) with the Stingray Ltd 115, lovely manoeuvrable combo in small swell or on flat water. At 95kg I've used this in around 14knts - 25+knts with 5.3 - 3.7 sails. fells really nice with all of them, lovely glide and never feels like it's trying to generate too much lift and drive you out of the water.
Haven't used the wizard, looks similar but maybe a bit more extreme no nose, should work well with the flow.

So far I was using a board similar to the ones you are just 10-15 ltr more, but volume evenly distributed as the ones you mentioned are.
The SS wizard has a totally different volume distribution, everything is more back... a lot. this implies that once in the air you maintain flight easily and you have less swing weight (I was reported..never tested), though I am afraind before getting into the air the situation is totally different: uphauling is much more difficult, and you cannot use sails bigger than a 6.0 unless you are a ..wizard because there is no nose to support the weight and pull from the sail before taking off. I am afraid that despite the quoted volume, this board is an high wind option, from 13 knt over and no more than 5.7 sail for being comfy. They also say the SS wizard is narrow; may it be if we compare max width, but the OFO is impressive, much larger than my actual board, from pictures I hestimate 60 cm at least, mine so far is 48 cm, this means that volume on front is veeery low, I wonder if in a real foiling situation with sail typically smaller than water start size you could manage to uphaul if sea state is not totally flat. My worries are obviously associated with my foiling abilties; I am a proficient windsurfer, but still learning to jibe properly on the foil. though I sail relaxed in any condiiton at the moment. Balz muller can obviously can sail the wizard 114 in 5 knots of wind with a 2.5 sqm sail at 20 knt of speed :-), rules do not apply the same for every body.
