Some interesting ideas there.
Although I don't know the best method for controlling ailerons or retractable wings?
foot operated slider?
Twist foot inside strap?
Electric trigger on both booms... like a JetSki throttle! Push for speed!

thedoor, that's exactly my thought. If I ever have to stop full size foiling then RC it is. That glider is sick too but with A much steeper learning curve for me. But hey, thats the safest way to be a glider pilot. That rhombodial wing geometry has been tried by the kite foiling crowd. Looks promising except for in weeds.

I guess you can probably get RC boats with real time video feed, like they have for drones too

Electric wireless triggers like on SRAM bike shifters. Attach them with Velcro straps and you can move them to different booms.

As an FAA Certified Flight Instructor (CFI), my best student ever was a RC pilot. With zero cockpit time, on his first flight, this guy could hold roll rates, airspeed, altitude with no problem. I asked him how he did it? ANS.-> Crashed alot of RC planes...expensive learning curve.

I flew RC before full scale and that was my experience too.

RC gliders is part of my plan for recreation once I can no longer sail. They are available to cover a very wide range of skills and many are built to shrug off crashes. Plus after windsurfing everything seems cheap.
I'm returning to RC recently in the Hope's my children will pursue it, they are at the perfect age and it's a fun way to play with physics.
