I do not think this is the way it's done there days.
Do a search and you will find tracks prefixed into a high density foam block.

RAL INN,
I knew about the high density foam block but I have done two boards using something like your method.
When I did it the hole for my 12' fin boxes was snug. Yours looks like it is too deep, maybe right through to the deck?

I taped around the area to limit the area the resin covered. Sand the fin boxes and the bottom inside the tape.
Also I filled inside the fin boxes with cut styrofoam then taped the opening to keep the resin out.

I part filled with epoxy then pressed in track with fibreglass wrapping it and overlapping.
(If I was doing yours and the holes were too deep I would add cut styrofoam pieces to the hole.)

I used chopped strand matt instead of woven mesh. Rougher finish but this matt seemed easier to make into the required shapes.

If you finally decide to use epoxy, consider to use slow hardener.

Fast hardener gets too hot and could eat the foam (that happened to me the first time). Couple of days later they began to delaminate cause the tracks were literally hanging on the air.

Second attempt, used PU foam and laminate over the tracks.

Still working
