I have a 5.5 old V8 sail which is a pain to rig and get cams to rotate in light wind.

I have the Naish Surf medium wing and WS1 wing which is very similar to the Surf large.
I use a Simmer 2XC 7m with the Medium wing in 10-15 knots or a 2XC 6m with the WS1 wing on flat water.
If there are waves or swells to ride (and 10-15 knots) I use a 5m wave sail.
I haven't tried the XL Surf wing but my guess is that a 5m would get you foiling easily in 10-15 knots when learning.
I suspect the big foil will feel pretty draggy once you're up to speed.
Your 5.5 V8 will be fine for the first few windfoil sessions - just kick the cams over

Big bonus of the medium wing (and the WS1) is the huge windrange - 10-25 knots
