From what you said, it sounds like you may have been in wind too low for the S740 wing, I use the F770 when there are consistent white caps starting around 11-12 knots, but that is the minimum and the F770 can be back footed if the gusts do not stay above 11 knots, use F770 up to 18 knots or more, so it sounds like you may have been on the low end wind range of the S740.
as for how to use the shims, the shims I got were curved and only fit on the front screw of the stabilizer. What do your shims look like? I know they went to flat shims that could be used under either the front or rear stabilizer screw. Shimming the front of the stabilizer would help with reducing back foot pressure, but will also make it easier to breech and slow you down too, so take more wind.
What wind speeds did you use the S8 and S7 in?
