You're right, at least to start with, and bigger yet is better yet. at 102kg I use a 1250 and a 2000 and only recently am I able to get the 1250 pumped up in winds as light as the 2000 can foil in. The bigger wings are draggy for sure, but they don't overpower as much as you'd think in any kind of reasonable windstrength. For one thing you can adjust the stab for less lift if you're getting blasted. However, starting on a really small wing can lead to all kinds of bad habits, especially planing the board before asking the foil to lift. The big thrill is getting foiling before the board would plane.
I'd like a 900 (or 800!) but I'd likely only use it in 25+ and I have other priorities.
As far as speed, I've got the 1250 to 24mph according to a Garmin watch, and that seems accurate. The 2000 has averaged just under 20 over a half mile stretch but I don't know what its top speed was.
