Does anyone know the differents it makes with fin setup etc triple to quad? what is best and why

Are you talking about a board that has the option to go between 1 or 2 rear fins? Or are you wondering about quad vs. thruster in general?

With my board I can change between single twin thurster or quad and just wondering what is the best set up for a beginer,and why
