The 2020 NSP Ninja (14'0x22) has an advertised volume of 250.6 Liters. I see that all the online volume calculators tell me that I should be fine but I'm wondering from experienced paddlers...will this volume (~ 250L) to weight (85kg/187lbs.) work out for me? My weight fluctuates 5kg (80-85) depending on the season, so I'm currently at my max weight.

22 is good for experienced paddlers with excellent balance.

22" is doable but normally pretty hard work for the majority of us mere mortals.

Yeah, the volume will be the least of your worries. 22" is scary narrow to me.
I have a 14' board that is 26" wide. Given that you are higher off the water on a thick race board it is already a bit tippy, but the width bothers me. Any side-on chop makes me wobble. It is fast, but the lack of stability means that I have not used it in a few years.
So, unless you are 4' tall, or have super balance, 22" will be too narrow.
