I'm wanting to change the standard thruster fin setup on my JP Fusion 8'5" so it is a bit more maneuverable but so it can still hang in on steeper bigger take-offs?! Any advice welcome...

Josh at wetfins www.wetfins.com.au/ can most likely give you some advice on what fins would be best suited to you, He's my go to guy for SUP fins (full disclosure, I have no affiliation with the company BTW).

I would recommend definitely the C-Drives.
Size them according to your weight, according to their chart: www.cdrivefins.com/pages/Sizing-Guide.html

I'm assuming you've tried moving the centre fin forward. If so and still an issue, try and get a centre fin the same size as the side fins, that should make a fair difference.

+1 of course. That's the first thing to try. These 2+1 setups only work for a longboard style of surfing.

Have a look at these videos , will give a good idea on some fins. The first video is my original fins they are no longer available. The second is the same fins in a new construction. My fin factory has since closed so I only have limited stocks.

+1
If i have a fin request, especially a 1 off, a replacement, or something out of the ordinary, I go to Josh. Great customer service. Also if I want to loosen up a bigger board I push the centre fin as far forward as possible, and use a fin smaller than the sides.
And where did i learn this?
Why right here of course.
