Which beach on the Central Coast NSW has good beginner waves for SUP?
Also where is a good spot with flat water for SUP?

Umina is the best for a beginner followed by toowoon bay. Flat water Terrigal or Terrigal lagoon.

Lake Macquarie a bit further north has a lot to offer subject to winds Allow for tidal runs around Swansea.
