Want to get it right

Hi All,
I have been a kayaker for a while now and have been looking at the recent boom in SUP. I am happiest doing anything with a paddle and my girlfriend is finally taking some interest in paddle sports (SUP). I made the mistake when i started paddling of walking into the canoe shop with a fist full of $ and leaving with a boat that i couldn't paddle, (obviously stock they needed to clear.) I am fearful of having the same experience getting a board for the Mrs. SO, I see her future paddling to be predominantly flat water with the tiniest little wave riding maybe. I have been looking at boards around the 10'6" size (she is under 80kg) I don't want to spend too much (up to $800) because i'm worried she may lose interest and it will sit in the shed taking up boat space. Any suggestions for a board would be great!
