You wont have a problem with any of the boards you mentioned.
Everyone new to SUPing experiences the balance issues initially especially in chop or surf. The learning curve is fast if you sup all the time and you will improve quickly.
If you think you will use it in the surf equally to the flat water use, go the Nalu 10'6" the lower volume will give you more manoeuvrability which you will want in the surf. After a short time it wont be as tippy.
If you will only use it occasionally and/or for other family members go the larger sizes.
Another option to consider is the JP Allround, it comes in 4 sizes, I would recommend the 10'6" x 30" or the 11'2" x 30" (base the size on your expected use.)
If you become like most of us on this forum you will possibly end up with another board within the year.
