I tried the pocket rocket (130L) a few times in small waves and it's a lot of fun.
I have the starboard converse (137L) wich is ok but the PR reacts much better to your movements in waves but also when getting ready for a wave that is coming.
I surf in the same conditions as you do and went for the surf pro 9'x29 118L because the converse feels too much like a longboard. Also going from a converse to a PR would be a small step.
I can't say much about the 7'11 120L but I think there won't be a big difference between these boards. stability would be similar only the 7'11 will turn a bit better and the glide will also be better.

Stability in the 7'11 the same as the 8'5 pocket rocket? Narrower and shorter doesn't lead to more stability .... and as to glide the PR is no star but would certainly glide better than the 7'11. If you check the starboard website the 7"11 rates 2.5 out of ten for both stability and glide versus the PR which scores 4.5 out of 10..... nearly twice as good.
