I had a go on one of those about 10 years at the NZ Kite Nationals. The really coordinated kiters picked it up pretty quickly.

I have also had a go on one of these hydrofoil e-bikes a couple of months ago. Lots of fun and pretty fast. Water-starting is a bit of a knack. manta5.com/
