I'm old enough to get senior's discount at some stores. I weigh 180 lbs.
I'm planning to buy the Slingshot Fwind V3 Foil- 90 cm ( 35") mast, i76 front wing .
And SlingShot Shred Sled - 3 in one - 7' 143L
I have shortboard windsurf experience , but it's been awhile.
So I will start with windfoiling.

I want to try SUP foiling and later try wing foiling too.

I have SUP paddled on a lake , using my old floaty Mistral SuperLight. 260 L , 12'
I plan to SUP foil on a tidal river and later ocean - 1-2 foot waves. (Prince Edward Island - Canada)
Not a traditional surfing destination.

Should I buy a shorter mast too ?

The SlingShot Academy videos ( probably 2 years old) - suggest a short mast for the first sessions - 15"
Not available any more , but 46 cm - 18" is

You'll be fine learning windfoiling on a 35" mast.
For sup a shorter mast around 30"-32" is nicer, as it's easier to control.
3in1 boards are a little bit of a compromise IMO, Plus I don't like taking foot straps on and off boards to switch sports. Having two boards is a luxury and might seem a bit much, But I'd rather have a dedicated windfoil board
like the wizard 125 and SUP/wing board around 6 foot long.

I only prone foil so this probably isn't as applicable. When I was learning though, the guy asked me, "do you want to fall from this high? or this high? :)

I've also heard that windfoiling is one of the harder foil disciplines. Wing foiling on the other hand is supposed to be one of the easier foil disciplines. Maybe try and grab a wing?

I dunno ..... Bruno , the owner at 2-rad in Montreal . says , since I can windsurf - way easier for me to start with a windfoil . I'm discouraged by him and others to use my 1985 wave sails ..... " if you put cheap tires on a Porsche - you don't a car that handles like a Porsche."

So it's only another $2,000 CAD to a new modern foil/rig . Sailworks Flyer 5.2 m, NoLimitz 2 pc mast , carbon booms.
I plan to be a beach bum for the next 3 months . Haven't had a vacation in years.

Wings can be used with skis in the winter ; so that appeals. I have 2 high end - Hammerhead toboggans . And used to downhill ski a bit.

100% go shorter there is nothing easy about learning on a 32" mast . 28" or shorter will feel much easier under your feet trying to learn. Behind a boat or efoil is your best bet learning to foil . Also need a shorter board , swing weight also makes it much harder. Don't try it on a big Sup.

Windfoiling is FAR easier to learn if you can windsurf.
I'd look for a better board though, the Shred Sled wasn't a good design. The Foil-X wing comes to mind:

Better than the Shred Sled will wing or windfoil. You need to figure out your priorities.

The tabou magic carpet (board on right) is another good choice production crossover board.
