I belive the secret is the updraft created by the 30 knot wind trying to go over the cliff. Basically the wind blows vertically up just in front of the cliff and it doesn't resume its original direction until its quite a lot higher then the top of the cliff.
I'm pretty sure there are places near Adelaide (down south) near Maslins that create similiar updrafts. Not that I'd recommend anyone trying it, if someone had a bad accident it would create bad publicity for the sport.
