I rode the 7m GT at Kitestock in the big air comp and I was able to fly it in winds ranging from 35-40 knots. At 90 kilos, I had no problem in hanging onto the 7m GT on a small twin tip.
I used about 2 inches of depower/trim but didn't really need it. The kite has good depower but I would advise that you need to be a VERY confident, experienced rider to venture out in anything over 35 knots.
If you're capable of handling the winds, it's such a fun ride. Mistakes will also be punishable by death in winds above 35 knots so make sure you are up to it before venturing out.
Caveat: I am a strong wind rider with a lot of experience, I cannot stress enough that you should exercise massive caution when riding in winds above your comfort zone. If in doubt, don't go out!
