I think it depends where you live. If you're in Vic or WA you definitely want a 7 to keep you kiting in winter and the stronger days, but if you like being overpowered maybe an 8 will suffice.
I'd suggest that maybe a more sensible solution at present is to sit out the big days altogether if you aren't experienced. Strong wind days are when stuff goes wrong quickly and you don't want to be in a waiting room looking to get medical care at the moment.
