I'm looking for amazing and best spot to learn kitesurfing in the east coast, close to Brisbane.

Mudgate is where the learners go!
Just get yourself your own bit of space as there's always lot's of kiters learning there too.

Sandgate beach or Brighton Beach just north of the city Bris Kites or surf connect offer lessons at either location. google them.

I'm not from Brisbane, but last time I went to these two, there was about 2 - 3m of sand on beach, Norfolk pines and a concrete wall just behind it, and 25-28kts direct onshore wind. It felt sketchy as, and sure enough later that day some poor dude got airlifted to hospital.

I wouldn't want to learn there in those conditions!

Don't forget the 50+ learners that won't go near the shore break and don't know any rules or how to put the kite low, to allow others to pass! They all put their kites at 12 and keep kiting towards you even when there's only 20metres of WATER until they hit dry land!
Don't kite there in a southerly, as it's shadowed from the headland..
P.S. Google short tackers and look out for them.. they breed at mudgate!

Must have been near high tide - there's a wide beach / mudflat there from mid to low tide.

that was obviously at the very top of the tide on a poor wind day. These spots give the cleanest wind of any spot around Brisbane as long as it is onshore or cross on (N-SE) due to the distance to the closed obstruction (about 19km). Like all locations, there are days that are gusty. Also, even during high tide you can walk out for about 100m. Any time other than high tide there is miles of beach. There is a reason the place is full of beginners.

Best advice for beginners is avoid tide levels above 2.0m (really careful folk could say 1.8m). Avoid gusty weather conditions (which is not often except if the wind is too far south), and talk to locals at the setup areas.
