Hey man I've got a 2014 Evo on five lines and a smaller 2015 on four (the v is quite high on both). Def give the Evo's a try out they are awesome kites, very controllable perfect for cruising and jumping.
As for the difference between five and four lines not that much as the v's are compareable height and the fifth line is unloaded so doesn't affect the flying.
The five line is faster to drop out the sky when you throw the safety but you can invert the four line and keep flying.
You can roll the kite on its back in the water by useing the fifth line for ultra low wind relaunch, but I've never seen anyone other than myself and a few foilers use that so maybe thats not a big thing (important concideration).
