I've just had to delete all cookies for another sites updates. Now I'm getting all forums, when "I hit latest topics".
I'm sure ages ago I set that so I'd only see forums I'm interested in. So is it possible now? If so how?

At the top right of this page (and every page) is a 'Subscribed Topics' button. Click that : )

If that doesn't show you only the topics you subscribed to, then they were stored in your cookies (v. odd), and you'll have to subscribe to them all over again, using the 'Subscribe' button at the bottom of each Topic.

Thanks evil, but that's not the problem. You can't subscribe to forums, only topics with in forums.
When I click on "Active Topics", I only want to see the forums I'm interested in. There's so many kite forums now. I have to scroll for ages to get to this one.

At the top of the Active Topics list are some check boxes. Select the Forums you are interested in; Windsurfing, General, etc.
