Hi

I have a small vineyard in the Perth Hills and this year's crop was a bit of a disappointment to me as it did not taste as good as I wished and did not clear.

However, rather than tip it out I would like to offer it to anyone who could make use of it. I have 200 liters and it is around 12% .

Distill it and make brandy ? (technically illegal)

Or better still turn it to vinegar, age it in oak...and you can have your own balsamic. Will take years of course,

Just add some antifreeze to achieve sweeter full body taste. It worked for the Austrians ... for a while.

I'd suggest he has a producer's licence....

Yeah I reckon still. Would be worth the effort as it may be a couple hundred bucks and make OK brandy?

Unless you want to continue making brandy the equipment to produce quality spirit is not worth it. While Illegal to distill at home as long as you don't sell it, you won't get much attention.

Vinegar is the go....even if it turns out crap - you can still use it for cleaning.

(PS: I Did have a share in a winery years ago)

Well then I am guessing "winery" was an excuse for a tax dodge and employing euro backpacker girls to pick grapes.

I am happy to help with vintage 2019 ....
