consciousness is eternal, it doesn't start or end. Only the subject of consciousness changes.

Everyday we inadvertently eat or kill thousands of micro insects and other life forms - who obviously sentient. Why is it ok to draw the line at not eating animals that you can see? It's not like size is directly related to sentience.

Firstly let's address this issue of consciousness. Yawn in front of a child under two. Humans yawn when others yawn, infants don't. They're barely even human after they're born.
