For the past few years, I've had this fixation on a new cocktail for the x-mas season. By the end of the end of the season, we never drink the same cocktail ever again - that flavour keeps repeating - kind of like lemon chicken, it always seems to taste so good at the time. However, I still do have a bit of a soft spot for the Mojitos - we did them in 2008 or was that 2007.

This year, or was it last year, I had this fixation on making Mai Tai's our cocktail for the season. I was just in Hawaii and had some wonderful tasting ones at the Outrigger resorts - $3.50 during happy hour.

On returning, I was looking on Google for recipes, It turns out there are lots of them and some of the ingredients are kind of hard to get here. As a result, we never quite got around to it.

Anyone got a good recipe for them.

3cl (6 parts) white rum
1.5cl (3 parts) orange curaçao
1.5cl (3 parts) Orgeat syrup
.5cl (1 part) rock candy syrup
1cl (2 parts) fresh lime juice
3cl (6 parts) dark rum

From memory, my Mai Tai's are as follows, and uses ingredients readily available in Aus;

(Approx - and in this order)
Tall Glass / HiBall
Half Glass of Ice
Decent Shots of White Rum, like Bacardi, over the ice
Dash of Orange Curacao
Over half a glass of Orange Juice, or Pineapple Juice, or Combo of the two
A dash of Red Grenadier poured lightly into glass, and it sinks to the bottom
Brown Rum, poured onto a dessert spoon on the surface, so the brown rum floats. Captain Morgan's is good.

Dressed up with whatever you like.
Note: go easy on the Red Grenadier, and Orange Curacao.

You really need to stir it to drink it though !!

Note: VLS - Vodka Lime & Soda is easier on the body. Reducing the sugars in the drinks, will help you out the following day !!

Thanks for that Simondo, I googled oregant syrup and rock candy syrup which are in Trader Vic's (1972) recipe and put it in the too hard basket. Fair enough for the first cocktail, when you are all pumped, but for the second, third and fourth it all gets too hard. Then in the morning, imagine all the mess - pots with sugar syrup coated to the sides wouldn't be much fun to clean.

I've got a feeling that your recipe is also pretty close to what I had in the outrigger resorts, I remember the different colors and the distinct pine/orange taste, besides those ingredients are easier to manage.

Just to add to your recipe, I'll get some of those fancy umbrellas skewered through a maraschino cherry - got to have that - and a slice of pineapple. I'll let you know how it goes.

I wonder if orgeant syrup is similar to Orange Curacao, and if Rock Candy Syrup is pretty much Red Grenadier ???

Mine are pretty close to this. He uses Triple Sec which is Curacao. Amaretto is not really required.

I'm not too sure: but all the recipes that I found on the google machine look quite different. The nice ones that I had were not in a tall glass. The common ingredient seems to be light and dark rum.

1/2 shot light rum (Bacardi)

1/2 shot Grand marnier

1/2 shot Amaretto

90ml pineapple juice

shot lime juice

shake with ice

pour into hurricane glass

garnish with pineapple wedge

Ah Mai Tai's. I worked in a bar in New York when I was younger with the King of cocktails, Dale Degroff (he invented Cosmo's and other popular lady drinks). well Dale had the original recipe card from Trader Vic's, the bar where the Mai Tai was first made. Below is spot on as the original recipe.
Orgeat Syrup -
Sliced almonds boiled into a milky broth then cooled and strained. You then saturate the mix with suger to turn it into a syrup and add a couple of drops of orange blossom water. Its a lost syrup that few bars do these days. I make sure that my bar stocks it at all times.
Rock Candy Syrup
This is an over saturated sugar syrup. you put this one in the fridge and it will just about harden!

3cl (6 parts) white rum
1.5cl (3 parts) orange curaçao
1.5cl (3 parts) Orgeat syrup
.5cl (1 part) rock candy syrup
1cl (2 parts) fresh lime juice
3cl (6 parts) dark rum

I wonder if orgeant syrup is similar to Orange Curacao, and if Rock Candy Syrup is pretty much Red Grenadier ??? no and no. Granadine is made from pomegranates and orange curacao is made from the skins of bitter oranges. this differs from triple sec which is made from the skins of sweet oranges.

Just having one now. The pineapple juice, orange juice, red grenadier, triple sec and amaretto make it too sweet for me.

Thanks Dr for the lowdown on the Oregat syrup.

Yes, I pretty much said go easy on those sweet additives. Load it up with ice too. It is a sweet drink. You can probably easily add 1/3 pineapple, 1/3 orange, 1/3 water or soda or mineral water....

And if you make the "layered" version, and stick the straw in the bottom, you will be sucking on syrup !!
