Forget the physical demands.

The mental demands of sailing on the edge 24/7, would max you out in a week or so. At that speed - a extra gust of wind, a freak wave or a bit of half submerged debris, and its all over.

No problem for the french crazy guys that sail em. Dunno if its true but i remember reading about one solo skipper of those big tris who used to sleep two hours a day and wouldnt back off when he slept. He would be flying the main hull asleep against the centre board case and if it went quiet he would wake up and ease some main sheet. I guess thats why they tip over every now and then. I reckon it will be easier sailing gitana on foils than off, smoother, quieter, drier, less stress on the gear. Like driving a car at 110kph vs galloping a horse at 40kph. I sailed in spitfire , a 12m hydrofoil cat t 32knots in 2001 and that was way smoother than in a similar sized tri at 15kts. I think they will find with foils gitana will shift to the next level. You can always pull em up and sail displacement but i reckon they wont. The other thing is at 40knots with modern weather routing, they should be able to weave their way through the weather systems even better than they do now.
