I am currently searching for an SUP that I can learn to surf with. I will be spending the summer, maybe longer, down in Sayulita, Mexico, surfing and SUP surfing. I would like to purchase a board that allows me some room to grow but doesnt make the learning curve insanely steep as well. I have come across a HYPR Winged Lion (9'2 x 31" x 5.5"). I am 5'11 and 177 lbs (180cm / 80kg). The price is right on this board as it comes with paddle, deck pad, and leash for $700usd so I am very tempted. I am just not sure if the dimensions are a fit. Any thoughts would be greatly appreciated.

Mate, that board is way too thick in my opinion. Too much volume equals too corky. Even the thickest boards I have heard of are only 4.5". I wouldn't touch it with a barge pole ..... actually, it is a barge so I probably would touch it with a barge pole, but only to push it away.
One thing is strange with this board: the main graphics will be covered by the pad. For me it says that the guy that designed the board has no experience of SUPing, otherwise he/she would have realized it immediately. Stay away.
