Thinking about a trip to Shark Bay, can anyone tell me if its a good place for kiting?
Prefer kiting flat water or easy breaks.

Big and little lagoon or south of denham, or take the useless loop rd and the are plenty of bays like tamala station, the are some breaks but advanced only as the is no rescue options if you email me ill fill you in with some info cheers
If you're after FLAT water, there aren't too many better spots around WA (ok, there are others, but SB/Denham is pretty damn fine IMO).
Kiting (launch/landing) in Denham itself should be conducted from the southern end of Knight Terrace. There are usually a number of small craft & one or two fishing boats moored immediately downwind, but they are not overly problematic if you are a competent kiter.
There are heaps of locations to kite at, including Big & Little Lagoon (4wd needed to get to Big Lagoon), have done a sensational DW from Eagle Bluff to Denham a few yrs back - approx 28k's or so.
Windy season is any time from Oct/Nov through to Jan/Feb. 10m or 12m for mornings, 6m or 8m for afternoons. PM me for more info re accommodation etc.
